Makes: 6 cups
Ingredients:
- 2 1/2 cups oats
- 1 cup macadamia nuts (or Brazil nuts)
- 1/2 cup ground almonds
- 1/2 cup flaxseed
- 1 cup pepitas
- 1 cup sunflower seeds
- 1 cup of sliced up medjool dates
- 1 large handful of coconut flakes
- 3 Tbps coconut oil
- 3 Tbps honey (or maple syrup)
- 3 tbs cinnamon
Directions:
- Mix together in a large bowl all dry ingredients (i.e. everything except for the dates, coconut oil, honey and cinnamon)
- Melt coconut oil with the honey and cinnamon in a smaller bowl in the microwave (30 seconds generally does the trick)
- Add the melted coconut oil into the large bowl with the dry ingredients, and mix thoroughly with both hands
- Place the mixture onto a baking sheet on a tray, and place in the oven at 180 degrees Celsius for 35 minutes, taking out halfway through to stir
- Remove granola mix from the oven, and add meddjool dates once cooled
- Store in an airtight container for up to 3 weeks
Damn! I'm trying this, sounds awesome, Lewis. Thanks. I've been doing a 12 week challenge and the diet on that is sooo much better than what I used to eat, and I'm loving it too, which is really cool. Seen massive changes.
ReplyDeleteGood man, you can mix it up a bit by changing the nuts around. Cashews and hazelnuts also work well, as do pecans. Which diet are you on? Did you watch the Australian Grand Prix last weekend? If that is a sign of things to come, I might have to try and find a new favourite sport!
